Boogie Bakery will be the first in North America to integrate Boogie Lab’s AI fermentation technology

Boogie Lab, a pioneering food technology company and artisanal bakery based in Croatia, has announced the establishment of Boogie Lab USA and Boogie Bakery, marking its inaugural microbakery venture in the United States, set to open in spring 2024. Co-founded by Karlo Vulin and Mladen Vidović, Boogie Lab has swiftly garnered recognition across Europe for its innovative approach to sourdough fermentation, integrating artificial intelligence with traditional methods. The expansion into North America was led by Dennis Turcinovic, co-owner of New York City's esteemed fine dining establishment, Delmonico's. Serving as co-founder of Boogie Lab USA, Turcinovic will oversee all operations in the US, including the launch of the first Boogie Bakery adjacent to Delmonico’s on Beaver Street, making it the premier North American destination for Boogie Lab bread.

Recognizing the exceptional quality and flavor of Boogie Lab bread and pastries, Turcinovic is eager to introduce American consumers to these artisanal offerings, crafted with cutting-edge food technology. Boogie Lab's innovative approach also enables fully automated production lines, facilitating rapid scalability and widespread distribution. Wholesale distribution within the United States is slated to commence in the spring of 2024. Boogie Bakery, situated at 48 Beaver Street, is scheduled to open its doors in spring 2024, offering a diverse array of sourdough-based breads, pastries, and sandwiches.
